Carnival, you know, is a period of jokes and crazy parties but, given the historical difficult period, we need to perspective on themselves and live this holiday carefully!
So, What We could do? Well Carnival is also a time of great meals! For this reason, We decided to ask CiuCiù Chef for his personal recipe to prepare the typical dessert of this party: Italian fritters.
Known by different names in the various Italian regions, lies, rags, frappe, galani or cròstoli, their history starts from far-away; in fact, the origins date back to when the Saturnalia were celebrated in ancient Rome, a festival very similar to today’s Carnival.
During these popular festivals, in which all social standards were overturned, one of the symbols of excess were the frictilia, sweets fried in pork fat, distributed to the crowd in the streets of the city.
Are You ready? Here are the ingredients for a gorgeous recipe:
Flour 300 gr
1 cup of seed oil
A pinch of salt
50 gr sugar
1 glass of dry white wine
Seed oil for frying
Powdered sugar for garnish
Place the flour on a pastry board and put all the ingredients in the middle;
Work the dough well and wrap it in plastic wrap and let it rest for about an hour. Once the hour has passed, resume the dough, cut it into about 3 parts and roll out some sheets;
Cut the sheets similar to lasagna into shape and repeat the process with each part of the dough;
Prepare a saucepan with high sides with plenty of seed oil, the oil will be ready at about 175 °, once this temperature has been reached, immerse your fritters a few at a time;
As soon as golden,remove from the pan with a skimming ladle. Put them on absorbent kitchen paper to reduce the fat in excess;
Serve your fritters by sprinkling with vanilla icing sugar!
